When we opened the River we could have chosen to keep Coke, plastic bottles of water, ready-made sandwiches, frozen brioche or packaged snacks. I admit that we would have made much more money and spent less labor energy. Minimum effort, maximum yield in short. We would have accommodated the convenience and habits of customers and we would have taken no risk of not being liked with our somewhat countercultural choices. But we would have lost so much in what is the value and authenticity of the work we do. Because selling industrial, packaged products however convenient and cheap doesn't leave much room for the love you can put into your work and the products you sell. We could have kept the packaged snacks and satisfied everyone right away, but what an anonymous bar the River would be! Therefore, in a world that goes faster and faster and is increasingly subjugated by the instant and cheap pleasure that packaged and industrial foods give, we have chosen to slow down and instead of the packaged Fiesta, for example, we offer you a Fiesta cake, of course 100% plant-based. Oranges, chocolate, Rum and here is the cake that tastes like Fiesta with the difference that the taste to this cake is given to it by the raw materials, not artificial flavorings. This like the many other "of the day" proposals, made with love and good intentions, as is everything we do at River, and at the end of the day that is always what pays off.
